Keeping your kids healthy this winter made easy with Happy Valley!
Kids Manuka Honey Gummies
· 1 1/2 cups fruit and/or vegetable juice (beetroot, kiwifruit, carrot + Lemon)
· 4 tablespoons plain gelatin
· 2 tablespoons Happy Valley UMF Manuka Honey
· Pour juice into a small saucepan.
· Sprinkle the gelatin over the top and let sit for a few minutes until it starts to “bloom” (it will get wrinkly looking on the surface and all of the white powder from the gelatin will absorb into the liquid).
· When all the gelatin is absorbed, whisk to combine.
· Place the saucepan over medium heat on the stove. Let the liquid warm through, but never boil. You are looking for the liquid to go from thick to thin and runny.
· Pour into molds (molded ice trays or flat tin) refrigerate overnight or until set.
· Remove from molds. If you used the flat tin, cut into shapes.
· Keeps in the fridge for 2-3 weeks.
Create your own colours: Red/Pink: Beetroot, red berries and carrots. Orange: Carrots, oranges, dash of lemon juice Yellow: Mango, Yellow capsicum, dash of lemon juice. Green: Kale, Spinach, kiwifruit, cucumber, apple or lime Purple: Purple carrots, blackberries and blueberries.
Kids Busy Bee Smoothie
· 250ml milk
· 1 tablespoon Happy Valley UMF Manuka Honey
· 1/2 frozen banana chopped
· 1 tablespoon Happy Valley Bee Pollen Granules
· Pop the ingredients into a blender for a quick and delicious smoothie - perfect for busy bees!
Kids Honey Heart Cookies
· 1 cup unsalted butter
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
1. In a medium sized mixing bowl, beat butter and honey until combined.
2. Mix in egg and vanilla.
3. Mix in flour and salt until just combined.
4. Divide dough into two parts. Wrap each section in plastic wrap and refrigerate for thirty minutes.
5. Preheat oven to 325 F.
6. Remove first half of dough from the refrigerator and roll out on a floured surface to just over 1/4" thick.
7. Cut dough into shapes with cookie cutters (and attempt to stop kids from eating all the cookie dough before you’ve even gotten them near the oven!)
8. Arrange cut out cookies on a baking tray lined with baking paper. The cookies will not rise very much so they can be placed close together on the sheet.
9. Bake for 13 minutes or until the edges of the cookies begin to brown.
10. Cool cookies on a cooling rack.
11. Roll out, cut, and bake the second half of the dough.
